There are 4 difficulty levels in minecraft. They are peaceful, easy, normal, and hard.

Peaceful:

In peaceful difficulty you don’t lose hunger, hostile mobs don’t spawn, and neurtral mobs like wolves and iron golems can’t attack you.

Easy:

In easy mode, you can lose hunger, hostile mobs do spawn, and any neutral mobs will attack you if you anger them. Hostile mobs only deal half the damage they would on normal difficulty plus half a heart. You can lose hunger, and if your hunger bar goes all the way down it will damage you until you have 5 hearts left.Mobs like cave spiders and bees can’t poison you on easy mode. On easy mode, the wither does not cause the wither effect, but wither skeletons do. Also, on easy difficulty, lightning sets only the struck block on fire, and not the surrounding blocks. Zombies can not break down doors on easy difficulty, and they cannot turn villagers into zombie villagers. Zombies and skeletons do not wear full sets of armor, and most hostile mobs only deal about half a heart to 2 hearts of damage to the player.

Normal:

On normal difficulty, hostile mobs deal about 2-3 and a half hearts of damage. Also, on normal difficulty, zombies can’t break doors, and villagers killed by zombies have a 50% chance of turning into zombie villagers. Zombies and skeletons rarely wear sets of enchanted armor. On normal difficulty, your hunger bar depletes and if it drains completely, it will damage you until half a heart. Also, on normal difficulty, vindicators can break doors.

Hard:

On hard difficulty, hostile mobs deal 1 and a half times the damage they would on normal difficulty. Also, on hard difficulty, if your hunger bar runs out, it will damage you until you die. Villagers killed by zombies always turn into zombie villagers. Zombies can break down wooden doors and can spawn more zombies when attacked. Spiders can spawn with effects such as regeneration, strength, speed and invisibility. On Java Edition, these effects can last almost infinitely. On hard difficulty, pillagers can spawn near the player and deal 2 hearts of damage. However, on Bedrock Edition, if the world is infinite, they deal 2 and a half hearts of damage.
